PERSONALITY
The Primosale is the starting part of the Pecorino making process. The preparation is carried out in naturally ventilated rooms for 10 days. It is a fresh product and goes to market after 15 days from production.
APPEARANCE AND TASTE
The crust is yellowish white in colour and has a wrinkled surface that reflects the modelling of the basket in which it was placed. It is a soft cheese and very tasty. It can be produced as plain or with olives, pistacchio, black pepper, chilly, truffle, saffron etc..
GASTRONOMY
Its soft and flexible texture makes it easy to enjoy as a snack or nibble, thinly sliced, or in cubes as a garnish for salads and sandwiches and it can also be fried. It is also be used as cooking condiment.
It goes well with red wines, better if full-bodied.
