PERSONALITY

The Caciocavallo is a stretched cheese from cow’s milk.

APPEARANCE AND TASTE

Product characteristics: parallelepiped form. Rind is smooth with an amber-yellow color. Cheese is a pale yellow color, compact. The aroma is pleasant and with a delicate and sweet taste, slightly spicy depending on its age.
– Packing: Product is sold in vacuum-sealed and boxed.

GASTRONOMY

With persistent ageing, the cheese picks up intense, earthy undertones and fruity aromas. Along the way, it turns from a milky white to a darker yellow in colour and becomes saltier. The result is a cheese with profound tasting notes and a perfect accompaniment to a glass of Primitivo red wine.
